Pecorino d'Abruzzo. Casauria Valley, Abruzzo. Brilliant greenish colour. Aromas of floral (white flowers) and crisp-fleshed fruit (pear). Lean and agile body, characterized by freshness and savoriness. The best Pecorino grapes are crushed in an anoxic environment to preserve their characteristics. The must obtained makes cold soaking for 7 days at 0°C. It ferments at controlled temperature for 1 0 days with subsequent aging in steel. The Chronicon Casauriense, from which the line and labels are inspired, is the collection of medieval chronicles concerning the Abbey of San Clemente a Casauria, compiled by the monk Giovanni di Berardo, characterized by fine illustrations. - Zaccagnini, Winery.
