"Sullivans Cove American Oak ex-Bourbon Single Cask is our most awarded expression and is overall the most award-winning Australian whisky ever. Aged in 200L American oak casks previously used to mature bourbon in the USA, this whisky represents the defining style of Sullivans Cove, with a strong malt backbone and flavours of vanilla, caramel, stone fruit, white flowers and powerful oak. As a single cask bottling, every release is different, expressing the unique characteristics of each barrel.
Cask TD0385 was distilled in December of 2006 and decanted in February of this year, maturing at 15 years, 2 months in a single, 200-litre, first-fill American oak ex-bourbon cask. Yielding 239 bottles in total, this whisky is bottled at a strength of 49% abv.
Nose: Lovely mix of caramel fudge, caramelised bananas, condensed milk and bright, fresh, banana leaves. Mars Bar, salted peanuts, and malty arrowroot biscuits. Kafir lime leaf, grapefruit juice, white pepper and a hint of clove. A star anise pod (not the seeds). A sweet earthy note, like the rainforest.
Palate: Country slice! Jam, sweet biscuit base and custard. Fills the palate well- no part is left untouched! Apple tarte tatin/stewed apples. Quite fudgy (childhood memories of the lolly shop at Kangaroo Valley). Sweet oranges, rind, flesh, juice and all. A lovely briny, agave, fine Tequila note. Banana smoothie. The vanilla is fine, not overbearing, but leads humbly.
Finish: Crisp fresh apples, grapefruit juice and orange rind. Nice light vanilla, malty earthiness with a touch of sweetness. Coconut pickle. Cloves, hint of allspice, white chocolate. Burst of kiwi fruit and glacé cherries. Very pleasant and lengthy finish- coconut and caramel fudge."
