2023 'Capitaine' Chardonnay
The Chardonnay for the 2023 Capitaine came from a rare biodnyamically farmed oasis in Coonawarra. Bees, butterflies and creepy crawlies abound in the long grass which tickles at the ripening fruit hanging from the lower trestles. The whole block is Gingin clone with natural hen-and-chicken tendencies allowing for perfectly balanced sugar and acid. The Chardonnay for the 2023 Capitaine came from a rare biodnyamically farmed oasis in Coonawarra. Bees, butterflies and creepy crawlies abound in the long grass which tickles at the ripening fruit hanging from the lower trestles. The whole block is Gingin clone with natural hen-and-chicken tendencies allowing for perfectly balanced sugar and acid. Wholebunches were pressed then cold settled overnight before racking off the solids to seasoned French oak for fermentation. After 12 days the barrels were topped and lees were stirred, which remained the technique throughout elevage. 9 months in barrels all up with 1300 bottles produced.
The nose is lemon curd, fresh blossom and salinity which carries though to a tense palate flowing into some rounder flavours of quince, baked citrus and white stonefruit. Classic structure and great length.
