"Blackberry, Red Plum and Vanilla on the nose with Cherries, Musk and Fresh Strawberries on the palate. The tannins are soft and well integrated with fresh primary fruits the star of this wine. A light and bright take on Franc thanks to extremely gentle winemaking.
Cabernet Franc was hand destemmed into 1000L flower pots and macerated on skins for 14 days; with gentle cap management only to wet the cap twice daily. The gentle working of the ferment has allowed the wine to retain its fruit profile without over extraction of tannins. Once dry it was gently pressed off using a hand basket press and aged in stainless before moving to seasoned French barriques for further softening. The elevage process was for 11 months with only the free-run selected for this cuvee and bottling taking place in February of 2023." – Parley
