Coming from our 2 blocks on the vineyard approximately 2 tonnes from 2 acres. All MV6 here, all destemmed and cold soaked for 4 days. Gently plunged once daily to try to keep as much wholeberry as possible. Pressed off after close to 3 weeks. No new oak used and a mixture of format also. In barrel for a touch over 12 months Wine sees 25ppm So2 at bottling. - Oscar Herman, Winemaker.
