50% Muscat Petit Grain, 50% Macabeu. Whole bunch carbonic fermentation. Maceration 1 week in concrete tank, elevage in fibreglass and large wood. Tom Lubbe is a New Zealander who grew up in South Africa. In the late '90s, Tom was working at the only estate in South Africa using indigenous yeasts. He helped forge an innovative space for winemakers like Craig Hawkins (Testalonga), who spent several vintages working with Tom. In 2001 Tom moved to Coteaux du Fenouillèdes and took over an old neglected vineyard. He farms his land biodynamically and diversifies his agriculture with many varieties of olive trees and up to 15 different plants between each row of vines. All of his wines have absolutely no additions.
