This wine is a field blend, a collective ferment of most of the white grapes grown by Tim and Monique. Chardonnay, Pinot Gris and Sauvignon Blanc with a little dash of Savagnin macerated together for about ten days before pressed off to old barrels and clay eggs. This wine is a field blend, a collective ferment of most of the white grapes grown by Tim and Monique. Chardonnay, Pinot Gris and Sauvignon Blanc with a little dash of Savagnin macerated together for about ten days before pressed off to old barrels and clay eggs. Each variety adds its own texture to this wine, creating an overall velvety texture; succulent like a peach – delicious!
Manon Farm is run by Tim and Mon, perched high up (600 meters elevation) on the Forest Range ridge of the Adelaide Hills nestled between the Basket Range and Lenswood. The deep look down into the Gulf St Vincent below provides a cooling air over the farm from the ocean. This combined with the elevation results in an extra long, slow ripening period for the grapes and ideal growing conditions for their organic approach. There is a super abundance of quartz and mica (silica) in the vineyards, which makes for very mineral driven wines. On top of fifteen acres under vine, they grow around 100 mixed heritage and wild fruit trees to complement and further evolve the cider range. Manon make many different cuvées depending on the season and only produces wine from grapes that they have grown on the land they tend. They vibrate with the energy of the site, deeply special, thoughtful wines.
