His Extra Brut is a dry, racy sparkling crafted from Chenin Blanc. It's a classic style, with oxidative notes and a tart edge carried on the back of a vigourous bead. Green apple, creamed honey, citrus, minerals and salted caramel, with charming floral caresses. The chalky texture is divine. Ticks every box, this one.
