It’ll make you want to sing-song, that’s for sure. Lark is an exceptional whisky distillery. Based on the apple isle, Tassie, they are the first carbon neutral certified distillery in Australia. Realising long ago that Tasmania was situationally idyllic and opportunistic to make whisky, they fought hard to change the antiquated laws around distillation. Following an amendment in 1992, they have been committed to their vision of the Tasmanian single malt. They clean up at the international awards circuit year after year and have now expanded their range to include premium rums, brandy and gin.
