2021 Castor Cabernet Sauvignon
An assemblage of Cabernet Sauvignon fermented for 2 months using whole-bunch carbonic maceraraon; rosato of Cabernet Sauvignon; and a light 5 day co-ferment of Cabernet Sauvignon and Merlot. Aged in old barrels for 8 months before being botled in the middle of Spring.
No added sulphites, no fining or filtraraon. Further aged in botle for 18 months. – Gemini
