Soil is of marine origin, calcareous with a high presence of Fossils and white shells which gives elegance and complexity to the wines. Certified organic grapes are destemmed and crushed, then fermented in cement tanks at a controlled temperature with their indigenous yeasts. Malolactic fermentation occurs spontaneously. The wine ages 50% in cement tanks and 50% in large 54hl untoasted barrels, before being assembled. It is then refined for several months in the bottle. The result is a wine, with a genuine sense of place and vintage. 90% Sangiovese, 5% Canaiolo, 5% Colorino. Lively ruby red colour. On the nose hints of dried oregano with aromas of cherry, both red and dark. On the palate the ripe cherry balances well with the full-bodied tannins typical of traditional Chianti, and rises vibrantly thanks to the fresh acidity of the finish.
