The vineyards sit at approximately 430m altitude, and the vine material for this wine now ranges from 30 to 40 years. After harvest the fruit is 100% de-stemmed into the 3000L concrete fermenters. Spontaneous fermentation with gentle pump-overs once daily. The vats are basket-pressed individually into barriques (approximately 30% new, of various French coopers - mostly Siruge and Dominique Laurent). The barrels were topped monthly, with a small amount SO2 only being added after the conclusion of malolactic, then again just prior to bottling. Drinking exceptionally now, but has the potential to cellar for decades. Classic Eastern Peake vintage. - Owen Latta, Winemaker.
