In the steepest vineyard on the estate, approximately 40% inclined and facing north, we grow Malvasia Puntinata del Lazio. This clone, characterized by a very thick skin, is macerated in contact with the must/wine for approximately 100 days, a period during which we can best extract the varietal's structure and typical aromas. Spontaneous fermentation, without the addition of selected yeasts, numerous punching downs and delestages, and subsequent aging in terracotta amphorae from Impruneta, complete the aging process to further smooth out the otherwise excessive tannins.
