In Oaxaca, Guerrero and Durango there are many rare, indigenous varieties that are highly sought after by the local mezcaleros. Bozal is committed to using these local, wild varieties, understanding that they produce flavours that best represent the region and evoke more energy and emotion in the final distillation. From the heart of the maguey these flavours are traditionally extracted to produce mezcal. The Tepeztate is used in this mezcal, a subspecies of the Marmorata Family, it has a very distinct, erratic leaf structure and flourishes best on the sides of steep, rocky cliffs. Herbaceous, stoney, grapefruit, resin, orange blossom. Pepperful and mineral rich. Stored in a ceramic bottle, best for aging and protection.
