2023 Little Red
This years Little red is a blend of Red Muscat, Pinot Blanc and Pinot Meunier. The Red Muscat was harvested at the end of Feb 28th. 50% whole bunch under 50% de-stemmed fruit into a plastic tank. Pressed off skins after 10 days ferment and filled 2 x seasoned French puncheons and one stainless steel tank. Where as the Pinot blanc and Pinot Meunier were picked together the second week of February. The Red Muscat was harvested at the end of Feb 28th. 50% whole bunch under 50% de-stemmed fruit into a plastic tank. Pressed off skins after 10 days ferment and filled 2 x seasoned French puncheons and one stainless steel tank. Where as the Pinot blanc and Pinot Meunier were picked together the second week of February. De-destemmed both varieties in a stainless steel tank and pressed after a half day off skin contact. Kept the juice cold and racked of gross lees after finishing ferment into old French puncheons. Wines kept on fines lees for about 3 months before blending then together, one month before bottling.
