2023 Rosso
A delicious blend of Shiraz, Tempranillo, Sangiovese and Nebbiolo. All components were fermented separately in open tubs and hand plunged. A combination of selected yeast and wild yeast were used across the different components. Each batch was pressed directly to a variety of vessels, including old oak, stainless steel and Flexcuz`be, for malolactic fermentation and maturation. Components were kept separate until blending and filtration. Bottled October 2023. - Billy Button, Producer
