"Hand harvested Pinot Grigio from Nova Vita in Kenton Valley, northern Adelaide Hills. Always harvesting early to try and get some pop from the fruit. Fermented on skins until the ferment is cold and quiet before pressing and running to a mix of tank and old oak., roughly 50:50. The cooler 2023 season is apparent in the lighter copper colour with the faintest of pink hues; classic Ramato. The cooler 2023 season is apparent in the lighter copper colour with the faintest of pink hues; classic Ramato. The season also shows a little in the herbal edge to the otherwise expressive fruits of ripe raspberry, fragrant apple and pear, clementine citrus and some peach juice. Quite richly textured with a sweet viscous entry balanced beautifully by acidity and fluffy phenonics. Likewise the savoury herbal and spice notes perfectly foil the exotic peach, guava, mandarin and pear juices flavours. Lots going on but all working in sync." -Maker's note
