This Chardonnay based vermouth is wonderfully dry, bitter and fragrant. Made by David Chapman, a former chef that turned to winemaking after a spell at Moorooduc Estate. In true chef fashion, there is a keen eye to the other things you can make with grapes and local produce, giving equal stead to the vermouth as he would to wine.
