Wine 2025 'Gzebo' Grenache
A fifty-fifty blend showcasing the Vale’s most contrasting Grenache soils: the bottomless white sands of Blewitt Springs and the limestone-laden, blue and grey clays of Willunga. Blewitt Springs Grenache. Handpicked. Five percent fruit crushed. Ten percent whole bunch. Eighty five percent whole berry. Wild fermented in open one tonne red tub. Hand plunged twice daily. Ten days on skins, only. Basket pressed to stainless steel tank to finish primary fermentation. Racked to seasoned hogshead barrel (82%) and stainless steel tank (18%). Nine months elevage on fine lees. Molly’s Grenache. Handpicked. One hundred percent whole berry. Wild fermented in open one tonne red tub. Hand plunged twice daily. Sealed up for a further twenty eight days of extended maceration. Basket pressed to seasoned hogshead barrel (75%) and stainless steel tank (25%). Nine months elevage on fine lees. Blended in December ‘25. Two months further elevage in tank. Single dose of 60ppm SO2 added post malolactic fermentation. No fining. No filtration. No further additions of any kind. Jimmy, Winemaker.
