American Oak Tawny Single Cask TD0452 was distilled in November of 2013 and decanted in August 2023, maturing at 9 years and 8 months in a single, 200L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled at 47% and producing only 277 bottles.
"Absolutely stunning. With 9 years of thoughtful maturation in a second-fill cask this vibrant spirit has been allowed to reign free, and has found itself beautifully. All of the hallmark Sullivans notes are present, and the fruit-bursts in transitory places are wonderfully fun" - Heather Tillott, Distillery Manager
Nose: Warm, full and bold. What an entrance! It’s a big fruit salad with honey drizzled liberally; there’s a youthfulness to this dram, but by no means an immaturity or a lacking of breadth. Mango, passionfruit (Weis ice cream vibes), with a nutty note… Macadamias and praline. Beautiful tropical waxy flowers and a bright herbal element of lemon verbena and green tea. The nuttiness weaves in and out, moving into the biscuity malt spirit influence. As one would expect from a refilled American Oak cask, vanilla is pleasantly present, but not in droves.
Palate: Outstanding. Very full body, and a waxy, gliding texture. The wonderful medley of fruit on the nose leads the way (fruit cocktail in syrup), with white peach being the showstopper. Marshmallows, Clinkers, musk sticks, the white part of liquorice all sorts, and a delicate lemon marmalade supporting the fruity elements with a confection theme. Olives in brine give a nice structural edge. A bright burst of thyme lights up the mid to back palate in beautiful fireworks fashion.
Finish: Another wild burst of fruit: apple, mango, peach, lemon, pineapple, pear. You name it, it’s there. Fennel honey, and olives again. The herbal note remains also, with a slight move toward a delicately nuanced second cupping of Assam tea; the breadth and complexity is retained, but the volume is lower. Dried pineapple.
