Cape Byron Distillery have released their Small Batch Series with Viognier Cask.
The third whisky released by the rainforest distillery in Byron Bay, Viognier Cask combines whiskies matured for over three years in Australian white wine casks and American oak ex-bourbon casks.
Viognier Cask is the first of a series of “small batch” style whiskies that the distillery plans to release over the next 12 months. The wine casks have been sourced from certified organic wine producer, Inkwell wines from McLaren Vale and American oak ex-bourbon casks.
The French oak casks have delicate characters of white peach, ginger and bergamot which show through on the sophisticated style of Australian whisky.
The palate offers stewed apple and spice, buttered croissant, mocha, papaya and charred peach.
Co-created by one of Scotland’s most awarded Master Distillers, Jim McEwan and Cape Byron Distillery Co-founder and distiller Eddie Brook, this Australian adaptation of a classic Scottish whisky is truly remarkable and unique to the terroir of the Byron Bay region.

This very limited release will see only 1150 bottles released.
