After destemming and soft pressing, the must begins fermentation spontaneously in the presence of the skins. Throughout the fermentation the wine remains in contact with the skins, for a period of approximately 15 days. The separation of the free-run wine from the skins follows. In the mouth it is intense, with good persistence and softness, with an elegant tannic texture.
