70 years old vineyards of Coda di Volpe from Paternopoli and Montemarano, at 450 metres above sea level - on calcareous marl soils but with higher percentage of volcanic sands on the top. Four days maceration on skins before being pressed off to chestnut with a small portion resting in pear botti for a year.
