This wine is born from the desire to challenge ourselves. Twelve days of fermentative maceration on the skins to obtain a structured, tannic Grillo that fearlessly faces conscious aging. Its organoleptic expression is therefore more complex, starting from its orange color, but also more authentic thanks to the choice not to add sulphites.
Vinification
The grapes are hand-picked and transported to the cellar in small baskets, where they are destemmed and kept in a tank at a low temperature (8°C). The following day, fermenting must is added (coming from grapes from the same vineyard harvested the previous week). Shortly before the end of the alcoholic fermentation, which lasts about twelve days, the wine is finally separated from the marc, which is pressed. The wine will remain to age on the lees until the following spring, before being bottled.

Organoleptic characteristics
Color: deep straw yellow with golden reflections. Nose: notes of flowers, citrus fruits and aromatic herbs. Taste: full-bodied, rightly tannic, warm but elegant and balanced by a good minerality that gives a long and complex finish.
