Medium bodied with notes of almond, lemon oil, pear, grapefruit zest, with a satiny attack and tangy acids. Saline-accented with golden fruits. Crunchy and classy, this is the only blended Aligoté in the Pataille range. Special stuff. Half the fruit is harvested from old-vine Aligoté Doré in Marsannay itself, including fruit from Auvonnes and Champ Forey on limestone and gravel, and the balance comes from Échevronne in Hautes Côtes, above Corton. The average age of the vines across the two parcels is more than 50 years, and although this is Pataille’s entry-level Aligoté, you can immediately feel the depth and energy born from the old vines and low yields. The wine ferments naturally in stainless steel before maturation in old foudre and then goes back to stainless steel for four months before bottling.

Sylvain Pataille is Marsannay born and bred. He grew up amongst the vines, helping his father prune the vines on a friend's vineyard. As he got more familiar with the area, he branched out and started working amidst other vineyards. Studying at Beaune with some of the other greats, he began working in a wine lab, as well as a winery in Bordeaux. Drawn back home, as most are wont to do, he looks after fifteen hectares of vines, growing Aligoté, Pinot Noir, Pinot Beurrot (Gris), Chardonnay, Chardonnay Rosé and Aligoté Doré.
