2025 Pinot Gris

One year and two weeks from officially starting this project I have wine in bottles that are labeled and waxed. A huge process. All done by me and mates by hand. Starting with what to make, then finding people growing grapes organically that we have access to. Then hand picking the grapes and starting the wine making process. Months of looking at how the wines are, questioning have I made the right choice through the long maturation process. Then deciding when the wine are ready for there next stage of life. Then how to brand this new thing. After that is done, bottling, labelling and waxing the finished product. So many people have been integral to this process and I can never thank them enough for all of the time and knowledge I’ve been given. - Matt Stone, Winemaker.
