mostly large old oak. Ferment usually takes around 6 weeks but the results are worth it.
Soft pale red with old ruby and orange highlights. The carbo is fairly pronounced this year with lots of pink
floral and strawberry bubblegum. Its complexity always defies its levity. Fruit tones include watermelon,
red berries, cherry cola and Campari/red amaro. A whiff of VA lift not unusual to the style. Serve chilled to
highlight the delicious watermelon/watermelon rind freshness and bring out the sweet spices. Tannins
are virtually non-existent but a little extra acidity adds length to the rich slurpable fruits. Best drunk with a
