Biodynamic Chardonnay grown in Borenore. The grapes were picked a little under ripe and on the sour side. The fruit was bucketed, wrapped and intended to sit for an extended gentle carbonic ferment. Although due to unforeseen circumstances, after 5 days on skins, the liquid was drained off into a stainless steel tank where it lay resting reductively for a year.
