Fruit for the Gueguen Chablis is sourced from seven hectares of vines grown around Préhy, Chichée, Courgis and La Chapelle-Vaupelteigne. The vineyards mainly face southwest on Kimmeridgian soils with a layer of Jurassic clay and limestone littered with small oysters and fossils. Vinification and maturation occur in stainless steel, with regular lees stirring and full malolactic conversion.
