Golden, in all senses of the word. Plenty of jasmine and dandelion, subtle green ness, encircled with orchard fruit and seashells. Could and will age, if you can bear the weight. The Petit-Chablis from Domaine Gerard Duplessis is anything but Petit. Corresponding to the Hautes-Côtes de la Bourgogne around Beaune, this AOC comes from vines planted on the high, steep slopes of the two banks of the Serein, between 230 and 280 metres above sea level.

A family run cellar in Chablis, since 1895, today managed by Lilian Duplessis. Located in the heart of Chablis it has 9 ha divided on 8 different appellations, a lot of which are 1er cru. Every vineyard has worked in accordance with organic farming since 2007 and achieved certification in 2013, but he now farms biodynamically. Incredibly difficult to maintain in the hazardous and slowly warming Chablis, but ultimately worth it - they are wines worth collecting. Lilian maintains that the old vines and their integrity, alongside his skill, maintain a freshness, litheness and quite simply gorgeousness (is that lame? We don’t mind) about them.
