Australia has a long history with Cabernet, and though we most famously associate it with the Limestone Coast, Victoria has its heroes – cue the Shay's Flat vineyard in Landsborough in the Pyrenees. Fruit spent 12 months in barrel before a further 4 months in tank to tighten it all up.
