Our second iteration of the almighty ‘light dry red’, featuring a sixty-forty blend of Pinot Noir from one of the Adelaide Hills’ oldest plantings, and short maceration Syrah, grown on limestone at Omensetter vineyard in McLaren Vale. Pinot Noir made by Mighty Isle. MV6 clone. Handpicked. One hundred percent whole berry. Wild fermented in open one tonne red tub. Seven days on skins. Gently hand plunged twice daily. Basket pressed to seasoned french hogsheads barrels. Nine months elevage on fine lees. Shiraz made by House Of Adlib. Handpicked. One hundred percent whole berry. Wild fermented in open one tonne red tub. Pumped over twice then gently hand plunged twice daily. Eight days on skins, only. Basket pressed to stainless steel tank to finish primary fermentation. Racked to seasoned french barriques. Nine months elevage on fine lees. Blended in December ‘25. Two months further elevage in tank. No fining. No filtration.
