"During harvest we made a quick trip up to the Hunter Valley to collect the skins the morning after Tim’s late-night pressing, brought them back to Marrickville and soaked them for six months on both fresh and aged Gold brewed with regenerative organic grains wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW.
