An ale made by the living rainbow Topher Boehm and drinks writer Mike Bennie. Brewed in July 2018, this ale rested in a single ex-Tyrrell's foudre for over 4 years. A sparkling and a still version because, why not? It’s old because it was an entirely spontaneous fermentation -a lambic-practice-inspired ferment. A sprinkling of brown spice touched by dankness. Oak still plays its part giving woodiness and depth. So interesting. The bubbles lift!
