This has all been made possible by the slow, experimental learnings of a dedicated 18-year journey of exploration, when on each occasion Ash brewed a batch of ‘A Cleansing Ale’, they separated a volume of the base wort and allowed it to spontaneously ferment. In August 2022 they syphoned an aliquot from each barrel, blending the pieces of this time-puzzle onto hop flowers in a tank and then, in September, they bottled it.

Two Metre Tall are first farmers and then makers. They brew farm ales & ciders in very small batches using farm grown ingredients from their own property in the Derwent Valley of Tasmania, as well as using ingredients sourced directly from farmers across the state. Barrel ageing, spontaneous fermentations, experimentation and everything in between.
