Made from 100% Fiano sourced from the Chalmers vineyard in Heathcote. Undergoes a 6 hour cold soak on skins before being pressed off an naturally fermented in stainless steel. Left on fine lees, unfined and unfiltered, no additions aside from a small amount of sulphur at bottling.
Soft underripe tropical fruits with poised acidity and a gentle phenolic pressure. Pairs phenomanly with spicy dishes like Sri Lankan or Indian curries.
