AMBER… Born out of a love of drinking savoury, textural, aromatic white wines all summer. I find nothing more satisfying and life affirming to drink aromatic, skin contact white wines, served chilled, when it’s its steaming hot. Usually late afternoon, usually on a deck….usually early in harvest.
Amber is a wonderfully aromatic and savoury expression of skin contact Italian white grapes from the Chalmers vineyard in North Heathcote. An essential summer wine. This wine brings together Pecorino, fermented on skins for 14 days with a smaller volume of Fiano (both macerated ferments and pressings from the SV cuvee). Both parcels offer very high natural acid and were handled oxidatively during ferment, resting over winter in seasoned barrels, topped regularly and racked and blended in early Spring by gravity, with some sulphur added prior to bottling.
Amber jumps from the glass with stone fruit aromatics, white peaches and lemon curd, orange peel with subtle spice and grapefruit like acidity. Like all wines in this ‘style’ it has a balance of a few loud elements…pushes limits but stays focused, but will absolutely save your dry mouth this summer.
