The grapes for the Les Follasses, grown on limestone and clay soils in the vineyard, are manually harvested and sorted prior to pressing. Made in the ‘ouillé’ style where the barrels are topped up during maturation so that the wine does not oxidise in the barrel. Glittery, shimmery Chardonnay that is typical of this style of wine from the Jura with just a rabbit's tail of oxidation for textbook regional roundness. Like most of the Jura icons we love to stock here in the shop, Michel Gahier is a purist - a champion of old school Jura winemaking and sustainable viticulture. For many wine folk, his wines were their a-ha! moment, sitting and swirling in a bistro long ago. Jura wines really are a sensory whirlwind of place, presence and time. Michel lives in the centre of the village of Montigny-les-Arsures, near the central town of Arbois. It’s widely accepted that Montigny is regarded as the finest terroir for the Trousseau grape in the Jura, making Michel’s reds a must drink. The whites have a freshness to them, they are not made oxidatively but they glitter with that Jura mountain glow. Like looking at a snow capped mountain in the distance, the sun just coming up over it.
