A blend of Savagnin, Pinot Gris and Sauvignon Blanc from the Deanery Vineyard, Balhannah. Planeted in 2004 on sandy loam on sandstone & ironstone. 50% whole berries, but no whole bunch. On skins for 7 days, naturally fermented in open top steel fermenters, hand plunged twice daily. Left on lees for 7 days and aged in steel for 11 months. Exotic, spicey & crisp.
