Heavier clay soils here, more top soil and less stone deposits. The soil composition allows the sauvignon blanc to grow vigorously and crop well. Destemmed and left to macerate and ferment naturally on skins for 4 days, pressed quickly to old hogsheads to complete fermentation and rest on full lees for 8 months. Herbal with licks of varietal fruit & subtle phenolic grip. - Rhen Dodd, Winemaker.
