Interesting little varietals in with Pinot Blanc and Vermentino replacing Savagnin this vintage, sat on skins for 4 days, pressed to tank to settle then 50% into stainless and 50% to old oak, no adds. A sing-song of white blossoms and stone fruit. Mouthwatering acidity, super textural and a line of bright minerality on the palate. Slurp. The new Defialy wines from Micah, are really very good. Each cuvee is a portal into a fanciful, carefree universe of anthropomorphological characters with endearing personalities. Maybe that’s because the name is a portal itself, an abbreviation of the way his parents used to sign off letters “don’t ever forget i’ll always love you”.
