Grenache from Shay’s Flat Vineyard, Pyrenees. Spontaneous fermentation with 50% whole cluster. Pump overs for ten days and then basket pressed, settled and racked to seasoned oak for twelve months. Finished in stainless for a further 3 months before bottling. No fining or filtering, with minimal SO2 added. – Charles Oliver
