One hundred percent Grenache Noir, but this is a blanc—herein lies the intrigue of its character. Handpicked by a big crew at daybreak to capture the bunches cool and crunchy, thus minimising colour extraction. Quickly whole bunch direct pressed about five hundred metres away. Wild fermented on full solids in flextank eggs. Elevage in stainless steel tanks for seven months. Ten months bottle maturation. No fining. No filtration.
