Winemaking The grapes are destemmed and crushed to an open fermenter, wild ferment spontaneously begins a day or two later, then after three days on skins the grapes are pressed to seasoned french oak barrels where primary fermentation and partial malo take place. The wine was sulfured and filtered prior to bottling in October.
