7 Ciel Champagne
Tenacity, structure and incredible acidic tension – this vibrant single vintage cuvee by Vincent Charlot brings together the 7 authorized Champagne grape varieties: Pinot Blanc, Fromenteau, Arbane, Petit Meslier, Pinot Noir, Pinot Meunier & Chardonnay from the Moussy plots, Le Potage and la Loge Pinard, with clay-rich Silex soils.
Vincent Charlot is amongst the tiny group of producers in Champagne working biodynamically (demeter certified) – less than 1% of the houses have been granted such a certification. For him, any malady in the vineyard can be managed homeopathically. His approach is honest and purist: "The concept behind my cuvees is as following: if the harvest is balanced, the winemaking will be easy. I have chosen to vinify in amphora and barrel. After pressing, the must runs off into amphora (stand alone or dug-in) or in oak barrels. The fermentation using natural yeasts may last several months, with regular lees-stirring. The wines remain on their lees and will be able to take the time to reveal their character. In June or July, the wines are bottled without fining or filtering. The malolactic fermentation does not take place to provide freshness and maintain the soul of the terroir. Not cold-stabilizing. These cuvees will not have the stereotypical flavors of the 'large Champagne Houses'. You will discover wines with a strong personality, finesse and purity as well as an unusual aromatic precision with floral and tropical fruit notes. All cuvees are single vintage. Every year I have the need to create new cuvees, because the aim of my Champagne is to reflect each part of the terroir and to provoke emotions."
