2020 Amphora Salty White
Theo Coles makes insanely pure 'pre-technology' wines from small chemical-free vineyards in North Canterbury, New Zealand. His 'Salty White' is crafted with Sauvignon Blanc grapes sourced from organic vineyards, fermented in whole bunches and aged partly in stainless steel, partly in amphora, and partly in two neutral barrels (which are filled and left untopped to develop a flor). These parts are then blended before bottling without fining or filtration. Guess what – it's a salty white! Also super floral and textural.
