40 years old vines. Dolcetto grapes found on soil rich of marl and clay. Whole bunch carbonic maceration in 50hl stainless steel tank. After few days the grapes are de-stemmed and pressed. As soon as the fermentation begins, it's drawn off after 3 days and left in concrete tank till bottling. No SO2 added. -Vino Mito, Importer
