Here we have one of the only 100% Oiry Champagnes in production, and the force of terroir makes all the difference in this unique drop. The soils in Oiry have a denser concentration of chalk, which imparts a delicious and rarely seen saline minerality to this Blanc de Blanc. A taught palate of nervy acid and delicate floral purity grips your gob with tension, luring you back to the glass with magnetic might. At only 2 grams dosage, it makes for an incredibly more-ish dry aperitif, ideal in the sunshine with a plate of oysters or scallops. Do it.
After cutting short his basketball career and being handed control of his father's domaine in 2009, Aurelien Suenen began researching the best Champagnes to inspire his own work, and realised the common factor in all the wines that truly shone was organic or biodynamic practices. With that in mind, in 2012 he began the slow, long work of converting his land to organic and biodynamic farming, cutting down the domaine's vineyard expanse from 5 hectares to just 3.5 so that all work could be focused and more closely managed. In 2016 his efforts were rewarded with organic certification. Aurelien is incredibly hands-on with his vines, changing the way they are pruned to mirror methods he learned when working in Chablis. His minute attention to detail glows brightly in his Champagnes.
