Pure, crystal bright Soave - a fresh green pear, jasmine, gold apple and a hint of pineapple. Tickly with acidity - a best mate to seafood. Soave was not historically praised as a fine wine making region, more as the home of an inoffensive, more affordable table wine. However, it’s slowly revealed to be a grand oversight as high on the hills, there are many gifted winemakers working with complex soils and ancient vines, crafting whites so minerally and textural they’d give Chablis a run for its money. The Suavia sisters are three such makers - their vineyards are planted on volcanic soils which are very dark and deep in the Fittà and Tremenalto areas, and rich of basaltic stones in the Castellaro zone. They vinify with a modern approach, with a focus on technology. This might be converse to many of the more lo-fi winemakers that we have on the website, but they are dedicated to sustainable viticulture and treating the fruit as softly as possible, for its clearest expression.
