Scintilla - 2020 Dayspring Chardonnay

"Organic Chardonnay handpicked early to retain natural acidity. Whole bunch foot stomped and left on skins for a couple of days. It was then pressed and racked to two 7 year old french puncheons to barrel ferment. Racked off gross lees once almost sugar dry and then returned and topped to rest on fine lees. Racked and bottled with no additions. Lemongrass and ginger spice and subtle nuttiness. Just 100 cases produced" – James Madden, Scintilla
